Yelm MOB - coffee bar/grease interceptor
Gary,
I just spoke with Jim and we have resolution on the entrances, but we
are still waiting on the fire access through the site. Once we have
resolved between Jim and Steve, we can finalize our landscape plans.
Looking forward to seeing comments tomorrow regarding the building
permit.
Thanks for your help, Gary!

I believe that Jim is waiting on clarification from Steve regarding the
turning radiuses at the entrances, as they will affect the landscape
plan. Once Jim received confirmation from Steve, we will finalized our
landscape plans and get those to you with the civil resubmittal.

I hope to have the comments this Wednesday. At this stage of the game
if I am not getting feed back they are usually minor. The building
permit still will not be issued until the civils are signed. I have not
seen the landscaping plans yet. Have they been submitted?

That will be confirmed by their letter to you. Sorry if I implied that
you were required to have an interceptor.

Just to clarify, the Thurston County Health Department is not requiring
us to have a 3-compartment sink.

Gina,
We are sticking with the 3 compartment sink policy, at least for your
project. We will add the section of our code to the approved civil
drawings stating if there is a problem we can and will require one
later. The retro costs may be what your client want to consider?

That is great news, Gary. Since the health department does not require a
3-compartment sink for an espresso stand, we will proceed without a
grease interceptor.
Thanks for your quick response.

Yes,
Our policy requires an interceptor when ever the Health Department
requires a 3 compartment sink.

Gary,
Per our conversation last week, I followed up with Kay Massong at the
Thurston County Health Department. She confirmed they would not require
a 3-compartment sink for an espresso stand. They do not having any
requirements regarding grease interceptors for espresso stands. They
would require us to have a hand-wash sink, pre-wash sink, and a
dishwasher. Having confirmed that, plus the fact that food prep will not
take place on site, do we need a grease interceptor?
Kind Regards,
Gina Dais
