She confirmed they would not require a 3-compartment sink for an espresso stand. They do not having any requirements regarding grease interceptors for espresso stands. They would require us to have a hand-wash sink, pre-wash sink, and a dishwasher. Having confirmed that, plus the fact that food prep will not take place on site, do we need a grease interceptor?
