Since Mr. Poole is out of the office for a few days,I reviewed the walk-in cooler information you submitted to be installed
at Pho Yelm, 201 Yelm Ave E.
You are approved to install the waik-in provided you:
1)Install the walk-in as per manufacture instructions and as per applicable construction codes.
2)If the condenser drain line will be plumbed to existing waste water lines, the connection will need to be indirect (i.e.,
with an air-gap).
3) Use caulking or other appropriate material to fill any gaps between the floor and the transition to the walk-in, and
along other floor/wall panel transitions (e.g., cove base). Seal seams to avoid water damage or food accumulation in the
� seams.

If you are planning on changing your broth cooling method from ice-bath to using the walk-in, make sure you have
enough shallow hotel pans to keep the broth depth to no more than 2".A speed rack may be useful. Please send us a
revised cooling procedure for your broth if you are making a change.

INSTALLATION INSTRUCTIONS
Floor Panels:
If the walk-in you are installing does not come with a prefabricated floor, skip this section.
Lay out the outside dimensions of the prefabricated floor with a chalk line. We recommend a 2"
air space from any building walls. The entire prefabricated floor must be level. If the existing
surface is not level,wooden shims (provided by the installer) are commonly used to accomplish
this.
Run a bead of caulking on both sides of the camlocks the full length of the floor panels before
camlocking the floor panels together.As you lock the floor panels together keep checking to
make sure they are level.
Wall Panels:
If no prefabricated floor is supplied, lay out the outside dimensions of the walk-in with a chalk line
on the surface being used. We recommend a 2"air space from any building walls. The 16 gauge
3/4"x 3/4"metal screed is to be secured to the floor with Hilti Drive Pin#W 10 or equal @ 23"on
center max. The wall panels have a groove at the bottom of each panel that the vertical portion
of the metal screed slides into. Install the metal screed at haif the thickness of the wall
panels. The vertical portion of the angle needs to be facing towards the inside of the room and
should be in from the chalk line half the thickness of the wall panel. Stop the screed 12"from
each corner and at the door sections. From the inside of the room the wall is then secured to the
16 gauge 3/4"x 3/4"metal screed with a#14 x 3"Hex Washer Tex Screw @ 23"on center max.
If a prefabricated floor is supplied,the 16 gauge 3/4"x 3/4"metal screed is to be secured to the
floor with#14 x 1-1/4" Phillips Pan Head Screws Q« 23"on center max. The wall panels have a
groove at the bottom of each panel that the vertical portion of the metal screed slides into. Install
the�rnetal screed at half the thickness of the wall panels. The vertical portion of the angle needs
to be facing towards the inside of the room and should be in from the chalk line half the thickness
of the wall panel. Stop the screed 12"from each corner and at the door sections. From the
inside of the room the wall is then secured to the 16 gauge 3/4"x 3/4"metal screed with a#14 x
3"Hex Washer Tex Screw @ 23"on center max.
Note:To assure you have a perfect 90 degree corner,measure in one direction 3 feet and in the
other direction measure 4 feet. Then measure diagonally across these two points you should
have 5 feet.
After installing the metal screed place a bead of caulking on both sides of the metal screed.After
you install the first wall panel,run a bead of caulking on both sides of the camlocks the full height
of the wall panels before camlocking the remainder of the wall panels together.As you lock the
wall panels together keep checking to make sure they are level.The entire installation must be
level.
Alternate Wall to Floor Connection�
This is an alternate method of securing the wall to floor surface in lieu of the method listed above.
At times in addition to the instructions listed previously a 1-1/2"x 1-1/2" 16 gauge continuous
angle will be supplied as additional connection strength on the interior,and exterior,if
possible. The screws will be the same as listed above.
Run a bead of caulking along the wall before installing the angle.
Door Section-With Self Closinq Door Hardware:
Before removing the door from the door section,if this is a SELF CLOSING door please follow
these steps.
When you OPEN the door BEFORE removing it from the door section, MARK the strap hinge
which is attached to the door-location in relationship to the and also MARK the base of the hinge
which is mounted on the door section. When you install the door to the door section just line the
two marks together and set the door in place.
Ceiling Panels Lagqed Down:
On the top of the wall panels,horizontal plane, run a bead of caulking on the front and
back. Align the ceiling panels to the edge of the wall panels. Before locking any of the ceiling
panels together run a bead of caulking on both sides of the camlocks the full length of the ceiling
panels. After the ceiling panels are locked together,run a 3/8"lag screw with flat washer,through
the ceiling into the top of the wall panel until the gasket seals tight @ 23"on center max.
Ceilinq Panels Camlock:
On the top of the wall panels, horizontal plane, run a bead of caulking on the front and back of the
camlock. Align the ceiling panels to the edge of the wall panels. Before locking any of the ceiling
panels together run a bead of caulking on both sides of the camlocks the full length of the ceiling
panels.After the ceiling panels are locked together, lock the ceiling panels to the wall panels.
Finish Trim:
Once you have finished installing the wall,ceiling and floor panels you are now ready to install the
finishing trim.On the exterior of the walk-in at the top of the wall panels where there is exposed
wood from the end of the ceiling panels you need to attach the"top cap".This is a piece of inetal
that is 7-1/2"long with a 90 degree bend on one end and a slight bend on the other end. You
attach this metal with#8 x 5/8" Philiips Pan Head Tek Screw @ 24"on center max.
Securing the door section.To do this you will use the 1-1/2"x 1-1/2"x 6"long 16 GA galvanized
angle that came with the box.Attach these angles on the interior side, at the bottom of the door
section. Before installing the angles, run a bead of caulking along the wall.
Install the cove base that goes along the bottom of the wall panels on the interior and the exterior
of the walk-in. This is a 6"piece of inetal with a'/z'bend on one end and a 1"bend at the other
end.The smaller of the two bends faces upwards.The cove base is attached using#8 x 5/8"
Phillips Pan Head Tek Screws @ 24"on center max. Before installing the cove base, run a bead
of caulking along the wall.
Use the cap plugs that were sent with the walk-in and plug up all of the camlock holes.
Note: If the walk-in is being installed adjacent to a building wall use the some of the 7-1/2"top
cap to close off the area between the building wall and the walk-in.Turn the top cap vertically and
attach it to the corner of the wall extending past the opening and butting up against the building
wall. Use the same screws as you did with the top cap.
Hinqed Door:
Pick up the door and place each of the hinge shafts into the shaft hole.
Note if this is a self closing door;follow the instructions listed on page 1.
