It has been corrected. Thank you for the emails. We reviewed your attached emails and although you addressed a majority of the items listed in the earlier plan approval letter dated March 10, 2016, we still need the following items: • Complete the remaining food flow that were not provided. Refer to the list of those items in the letter and the email you had sent. This includes the rice and beans. The packet of information provided with the application did not include all the items requested and neither did your recent email. Please cross reference the letter with your list of foods. As a reminder, when cooling is required, indicate that the food should also be uncovered while in 2 inch shallow pans. Note: Based on the last inspection on June 6, 2016, there were significant red point violations concerning your refried beans, steak, chicken and pork. The final inspection resulted in 50 points. This does not put the restaurant at `good standing" as you noted; in fact, it requires a follow -up inspection. Despite how long a food establishment has been in business, it is not "excessive "for our department to occasionally ask for food flows chart requirements to review, especially if we have reason to believe the flow is not being followed as approved. • We acknowledge that modifications were made to restaurant after plans were approved and whether or not they were minor or significant changes, it still changes the flow, storage and operation of the food establishment that still needs to be addressed. Due to these changes, it will be our discretion to decide if the current layout meets the food code requirements or not. Based on the walk -thru last week, there were definitely some issues we shall need to see completed to meet the requirements. Attached is the letter based on our walk -thru inspection. please provide a response to these items so we can eventuallv move forward despite the modifications. Unfortunately, since neither of the owners were present during the walk -thru, we weren't exactly sure what are the plans to finish off the food establishment and other expectations that were questioned; therefore, we listed everything we could observe that clearly needs to be completed and /or addressed prior to the next visit. Although a pre- opening check -list was provided already to Rick Christensen, we have attached a copy for your use to assist with the pre- opening inspection. Once we receive a written response to both items , and actually completing the items on the letter, we can discuss potential pre- opening scheduling dates.
